Some of my favorite (and fast) breakfast ideas:

crustless spinach ricotta tart (make ahead and just reheat a piece in the morning)
FF plain yogurt mixed w/ natural PB and a packet of splenda
mini WW bagel sandwich w/ egg beaters, canadian bacon & a slice of LF cheese
muffins (I *always* have several kinds in my freezer)
smoothies

There are SO many quick and easy breakfasts. I have pretty much the same types of mornings as you, with DH gone early and I have to get the kids up and ready and fed. I'm usually eating in the car on my way to run errands after I drop them off at school. :o)

Cold cereal is pretty quick. Also you can prepare things in advance and just heat them up. When I make steel cut oats I do it on Sunday night and then just reheat in the morning during the week. Same with the Baked Oatmeal recipe. I make a big baking dish of it and the kids and just slice pieces off all week. I also make whole wheat waffles and pancakes on the weekends, freeze them and just heat them up on weekday mornings. For protein turkey bacon is pretty quick - I microwave it for 1 min a slice.

Oh, I did forget--I also make big batches of WW waffles and pancakes to stick in the freezer. I don't eat them often, but the kids do. I NEVER buy frozen waffles or pancake mix anymore. :o)

I always thought this was gross, until I tried it.
I get a small microwave safe dish and spray it with cooking spray. I crack an egg in there, mix it well and microwave it for 30 secs. Take it out and stir it, micro it again for 30, and again if necessary. While that is in there, I have a mini bagel toasting. I put cheese on my egg and throw in one of those Morningstar veggie patties that taste like sausage in the micro to for about 20 seconds on each side. I have a tasty mini breakfast sandwich!

I am also a big fan of the baked oatmeal. I love adding blueberries to it. I slice it up into the appropriate servings (you can do a search for the recipe) and if I don't think we'll eat them all that week, I'll freeze them. A little time in the micro, and a drizzle of sf syrup...they are great!

Fiber One Honey Clusters with sliced bananas and ff milk is another recent favorite!

Dee, just be sure you get LEGAL waffles and make legal pancakes! A CL can tell you exactly what the rules are, or you can do a search on "pancakes" or "waffles." There are some recipes posted in the recipes section. (I don't really like pancakes and waffles, so I'm sorry not to be more help!)

There are only a couple of legal frozen waffles. The only one I have seen in the store is Kashi Go Lean brand.

Have fun shopping!

You can have Kashi frozen waffles (regular or blueberry). 1 Kashi waffle is a South Beach grain serving. Here are some pancake recipes:

Thanks Cathy for the great sounding pancake recipes! We eat pancakes once almost every weekend, so this is super that I can now participate. Yay!
