Hello everyone! I am curious to whether I am able to add cranberries in the 2nd phase. I have checked the book and various websites, but it doesn't say anything about cranberries. :( Any info you might be able to provide would be FANTASTIC!! Thank you!

Are you referring to fresh or dried? The dried cranberries (aka 'craisins') contain sugar and are not allowed. Some health food stores may carry dried cranberries that do not contain sugar.

I'm not sure about fresh cranberries. I think they are okay, but I don't think anyone has asked about them before.

Fresh cranberries are fine to enjoy in phase 2. Dried cranberries often contain sugar. If you can find unsweetened dried cranberries that would be fine. Canned cranberries also contain sugar and should be avoided. You can make your own cranberries sauce using fresh cranberries and splenda. Here is the recipe:

1 cup water
3/4-1 cup splenda
1 bag cranberries

Combine water and splenda in saucepan and bring to a boil. Add cranberries and boil for 10 min until they have "popped" and broken down. Cool completely at room temperature.

I have always made a sauce with fresh cranberries and rasberries that goes over pancakes at Christmas. I bet if you did the cranberries with rasberries and water and splenda, you could spoon that over some legal SB pancakes and that would be yummy!
