I think I'm going to try the SB lasagne. I finally found ww lasagne noodles at wallmart yesterday! I have looked for them at every single grocery store I've ever walked into and I finally found them! We'll be having lots of roasted asparagus and salad with it. Yum!


What about you guys?

Grilled portabello mushrooms stuffed with pesto, roasted red peppers & mozzerella
Salad of white beans & cherry tomatoes tossed with olive oil & white balsamic vinegar

Tonight is kind of a mix and match dinner. I baked a spaghetti squash this afternoon, so we'll be having spaghetti squash breakfast casserole with asparagus and for an extra veggie, the leftovers of last night's garbanzo bean salad.

Hey Cathy, would you mind posting your recipe for the white bean salad??? Sounds interesting and I've been making alot of bean salads lately to help us get our bean servings in every day.

Hi Rebekah,

I have a lot of variations. I love white beans. I rarely measure so here's tonights version:

1 can of white cannelini beans, rinsed & drained
1 pint of cherry tomatoes, cut in 1/2
1 handful of walnuts, lightly toasted

Mix all of the above together. In a seperate bowl whisk the dressing:
olive oil
balsamic vinegar
teaspoon of dijon mustard
Salt & pepper

Mix it all together and then top with a sprinkle of goat cheese.

Sometimes, I simply mix the white beans with some store bought pesto. Chopped jarred roasted red peppers are good thrown in there, too. You can add pitted olives if you like them.

We're having grilled Asian turkey burgers on ww bun, a bean salad w/ radishes, scallions & mint from "Cooking Light", and now I think I'll make spaghetti squash too, since I have one that I know DH won't cook while I'm out of town, LOL.

Caponata


I'm using the leftover steak for another recipe in a few days. It's a ww wrap with sliced steak, bleu cheese and carmelized onions.

Karen, that wrap sounds amazing!! I adore all of those ingredients. Is it served hot or cold? Anything else in there? Mmmmmmmm --- now I want a steak wrap right after eating a huge breakfast!

BTW, my dinner was a Morningstar Farms pizza burger, a double serving of kisir (kind of like a spicy tabouli with tons of veggies) and a plum.
