Found this oatmeal recipe on recipezaar.com. The brown sugar would have to be subbed with splenda...otherwise would it be ok? would this be a "green light" kind of food--I could eat it often (if I end up liking it?) Could/should I use steel cut oats?

Apple-Cinnamon Overnight Oatmeal Recipe #154635
Easy, Easy, Easy...T hat's what this is. Put ingredients in crock pot the night before. Upon serving, add more brown sugar to taste.

½ day 10 min prep
2 apples, chopped
1 teaspoon cinnamon
1/3 cup brown sugar
2 cups old fashioned oats (NOT quick-cooking)
4 cups water
1 pinch salt

Mix together the apples, cinnamon and brown sugar in bottom of crock pot.
Sprinkle oats over apples, then pour in water and salt; DO NOT STIR!
Cook on LOW for 8-9 hours.

I tried overnite oatmeal once (different recipe), and it was totally overdone and stuck to the bottom of the crock in the morning. I think my crockpot is just too big. Here's the oatmeal recipe I use, with the appropriate substitutions.

Steel Cut Oatmeal Recipe

Show: Good Eats

1 tablespoon butter (sub Smart Beat, or other SBD-approved)
1 cup steel cut oats
3 cups boiling water
1/2 cup whole milk (sub skim)
1/2 cup plus 1 tablespoon low-fat buttermilk
1 tablespoon brown sugar (sub SPlenda BS substitute)
1/4 teaspoon cinnamon

In a large saucepot, melt the butter and add the oats. Stir for 2 minutes to toast. Add the boiling water and reduce heat to a simmer. Keep at a low simmer for 25 minutes, without stirring.
Combine the milk and half of the buttermilk with the oatmeal. Stir gently to combine and cook for an additional 10 minutes. Spoon into a serving bowl and top with remaining buttermilk (I usually just top with skim milk or lt vanilla soymilk), brown sugar, and cinnamon.

As much as I do cook.... I've never tried an oatmeal made by me... but I do love Quaker Oats low Sugar oatmeal!! YUM!!!!

Just to clarify...Only old fashioned oats (the long cooking kind) or steel cut oats are recommended on South Beach. Instant oatmeal is not approved.

No way!! lol ok, well good thing I only had a couple bites occasionally - I make it for the kids... I did eat a package one day for breakfast but it didn't fill me up well, so I went back to eggs.
