Homemade Ice Cream

This morning my kids got it in their heads that we need a ice cream maker. Does anyone here have one, and if so, have you made any SBD friendly ice cream recipes? I looked at a few online, and a lot seem like they'd be legal if the sugar was substitued with Splenda.

Hi Christy - we have an ice cream maker and have made ice cream with FF milk and splenda. It is usually softer than regular, but still quite tasty. You kind of have to experiment with flavors to find what you like (fruit, cocoa, etc). For personal reasons, I have not had any ice cream (other than fudgsicles) this summer since starting SBD because it triggers cravings for me.

As far as recipes, we just use the ones in the manual that came with the ice cream maker. I highly recommend getting one because you can have complete control over the ingredients in your ice cream.

I don't have the recipes close by, but let me know if you need them and I should be able to scan and post for you.

Another fun ice cream-type treat is a granita. Here's one the kids will like. You can also search recipe sites for other more adult flavors that are great when entertaining in the summer (e.g. espresso granita, ginger-grapefruit granita).



Berry Granita


Want a light refreshing treat this summer? Try this dessert to satisfy your
sweet tooth!

6 servings

Ingredients
1/2 cup water
1/4 cup sugar substitute
1 bag (10 ounces) frozen blueberries
1 lemon, peeled and juiced
lemon twist, for garnish
1/2 cup low-fat frozen whipped topping (optional)

Instructions
In a small pot over medium heat, combine the water and sugar substitute. Bring to a boil. Boil for 2 minutes, then set aside to cool to room temperature.

In a food processor fitted with a metal blade, combine the blueberries, lemon peel, lemon juice, and cooled syrup. Pulse for 2 minutes, or until the blueberries are coarsely ground. Pour into a small metal bowl and stir a few times with a fork to break up any large pieces. Cover the bowl with foil and place in the freezer overnight.

Spoon into 6 serving glasses, garnish with a lemon twist, and top with the whipped topping, if using.

My brother gave us an ice cream maker in the shape of a ball that you shake for 30 minutes (i.e. throw it around at a party) and it makes ice cream. I'm skeptical but bringing it up to Maine (where we'll be meeting up with my brother) to experiment with...
