What's your meal plan this week?

Teresa....where are you??? Needed ideas! = )

This is what I have planned for dinner this week, took the meat out of the freezer today, hopefully I will stick with it:

Monday - Stuffed Eggplant (stuffed w/ ground chicken, veggies and br rice)

Tuesday - Pork Loin Chops baked w/ onions, gr peppers and tomatoes, Sauteed Zucchini

Wednesday - Broiled Flounder, Roasted Broccoli, Sauteed Spinach

Thursday - Pita Pizzas w/ turkey pepperoni, red peppers, onions, salad

Friday - Dinner out (Outback or Pizza treat)

Lunches will be Chef Salads, leftovers or just munching on deli meat and veggies.

I started a journal for my meal plans -- I planned my meals, shopped and then was reminded that dh will be gone for four days this week! So, I'm ready for next week. =)

What are pita pizzas??

Here's my plan for the week (I seem to have a bit of an Asian influence):


Monday: Asian Chicken Patties, and I have a Chinese eggplant that I need to find

I wasn't trying to be obscure about sharing my plan -- here it is!

This week:

Mon: MichaelAnn's Chx strips and sliced raw veggies ( I always make "kid fare" on Monday nights because DH doesn't come home -- this is my new favorite!!)

Rest of the week:

Indian Patties w/ yogurt sauce, spiced garbanzo beans, and salad

Andrea's black bean burgers w/ guacamole and herb/quinoa salad with garden tomatoes

Pork chop and feta skillet, white bean salad, and salad

King Ranch Casserole and salad

Deb's Chipolte burgers, slow cooked green beans, and sliced raw veggies

I made the chx strips last night, my kids were very excited to see them again. Now I heard rumor of going out tonight, but if not, I want to made the pork chop skillet, I think.

I'm sorta doing the same thing about the journal...it starts out as a meal list and then into a grocery list for the week. I also am jotting them down on my calendar. I love that I am not struggling to figure out what we are eating every night, I never had the meat defrosted in time, the right ingredients etc etc. So this new lifestyle change is starting to work.

Pita pizzas are the easiest things ever, and your kids will like them too. I just buy whole wheat pitas, top them with sauce and cheese and whatever toppings and throw them in the oven for about 15 (?) minutes to cook. The other night I didn't do traditional pizzas, I just sliced some broiled chicken, artichokes, roasted red peppers and mozz cheese and cooked it that way. DH loved it. It is so easy. I get tired of cooking by Thursdays so this may be a staple for that night.

I cooked up a large batch of the Chicken Strips yesterday and froze them. I need to make dinners easier, as much as I enjoy cooking, cooking every night is becoming too much. Need to simplify my life!

Planning and preparing and having the stuff on hand has made a great difference for me, too. And I am looking for cook ahead options, too. Some nights we're just really busy (as all families are).

I'm going to try those pita pizzas one night when DH is out of town this week. Thanks!

My oldest was very excited to see the chicken strips again. He said, "I just love the dipping things." =) My four year old can't stop talking about the mediteranean meatloaf -- he keeps asking for his "favorite meat" for lunch. =) So, I need to make that again, too. I could make one of those, slice it and freeze it and have it on hand for his lunches. (whoa! I still scare myself when I say stuff like that....)

I'll have to try that mediterranean meatloaf. I just bought a bunch of ground turkey, do you think I can sub that? I like the idea of slicing and freezing. I know what you mean about cooking ahead...I made stuffing for the Stuffed Eggplant last night and had a ton leftover so I am going to make stuffed peppers tomorrow night, so easy with it already made!

I may have to pull out some chicken strips for my son tonight, he's so wierd about food it's all about the timing, I will be so happy if he eats it. He's not 3 yet so I'm hoping it gets better!

Doesn't take much to make me happy I guess...lol. I get excited when I see the subject "meal plan." I printed out a couple. This has always been the hardest part for me is to learn to cook a new way and what to cook so thank you so much Teresa and Karen so far I've printed out your 2 plans. I did make the salmon burgers last night and they were delicious. I'll never make from the can again. Keep the plans coming!

I believe the recipe on the meatloaf calls for ground turkey (though I used ground beef). Also, I mixed the spinach mixture throughout instead of lumping it in the middle, so my kids couldn't rebel against it as easily. =)

How did the chicken strips freeze?

My 2 year old is my fussiest eater of the three. I hope she gets better!
