Squash Casserole

OK...for the squash casserole, I have made it 3 times since on SBD because we had squash overflowing in the garden. I played with quantities each time. I am very liberal with cheese. You should try making it a couple of times to figure out if you like it more or less dense. I combined the following two recipes (most from the allrecipes).

SQUASH CASSEROLE - MY VERSION OF THE TWO COMBINED
INGREDIENTS
4 cups sliced yellow squash and zucchini
1/2 to 3/4 cup chopped onion
1 grain serving of Triscuit crumbled
1 cup shredded Cheddar cheese (***I prefer the RF colby/jack mix, but cheddar good too)
2 eggs, beaten
1/2 cup milk
1/2 cup sour cream
1/4 cup Smart Balance butter
1 teaspoon salt (I omit the salt because the triscuit is salty)
ground black pepper to taste
1 teaspoon garlic powder
DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C).
Place squash and onion in a large skillet over medium heat. Pour in a small amount of water. Cover, and cook until squash is tender, about 5 minutes. Drain well, and place in a large bowl. Squeeze out excess water.
In a medium bowl, mix together cracker crumbs, melted butter, and cheese. Stir half of the cracker mixture into the cooked squash and onions. In a small bowl, mix together eggs and milk, salt, pepper,and garlic powder, then add to squash mixture. Spread into a 9x13 inch baking dish (sprayed with non-stick spray). Sprinkle with remaining cracker mixture. Bake in preheated oven for 25 minutes, or until lightly browned.

I hope you like it! The good thing about it is that it has very basic ingredients. You can play around with the quantities to get the flavors you want. This is one of those recipes where mine tastes slightly different every time.
I love thyme on my zucchini, so if using some zucchini in this casserole, I would add a little thyme.

Do you mix the sour cream with the egg & milk?
Hi Cathy - I just mix it in and bake. Sorry about that...I forgot to change that when combining the recipes. However, it also sounds like a good idea to maybe cut back on the sour cream in the casserole, and add a bit on top. I will try that next time.

I have such a habit of buying Triscuit that I have never tried the All Bran crakcer. You and Aggie prompted me to buy more squash...I will have to try and grab the All Bran crackers before I make it next time.
