My stolen breakfast idea...

I stole Joy's breakfast idea of the mini bagel with a MS patty and roasted peppers. I put laughing cow cheese on it instead of cream cheese. I'm eating it now, and WOW! Is this ever good. I hadn't tried it before now because I was scared of the MS patty. Veggie patties sounded kind of gross. I hate tofu. I'm not a huge veggie fan. (I don't like zucchini, eggplant, asparagus, squash or spinach.) I know, I'm not all that adventurous. I was so excited that I tried it and it worked out! Don't supposed I could get lucky enough to be able to count these as a vegetable, huh?

Protein or veggie... I don't care! It still tastes good! And I like the red pepper for flavor but I don't put enough on to count as much of a veggie serving. Well, you didn't fail me on the breakfast idea... maybe I'll branch out and roast some veggies. I like onion so I can't try that one and call it being adventurous. What is your favorite roasted vegetable? I don't even know how to buy an eggplant. What should it feel like? Actually, I hate to admit this... I'm not sure how to buy a lot of things. I'm really branching out and trying new things. I just had a mango go bad because I didn't know when to eat it. I've got a plum now that I keep looking at because I'm not sure if it's ready and I bought a plout too. I'd never ever heard of a plout! I think I'm going to try both the plum and the plout today. We'll see how they go. (Trying new fruits is way less scary than vegetables.) You know, I consider myself an intelligent person. My husband has is Masters in Physics. We're both pretty educated people. But between the two of us, we are totally lost in the produce department! Anyone wanna come walk me though the fruits and veggies?

Well, I don't hate all veggies. I'm good with green beans, broccoli, beans, tomatoes, carrots, peppers, onions, cauliflower, lettuce and of course I like the two that don't count as vegatables, peas and corn. Next week I'll get adventurous and try roasting a few new, exciting (and scary) veggies. My husband is crazy in the kitchen and likes trying new things. I'm sure he'll be completely gung-ho about this idea. And if it's gross Stephanie (luvnmy3babies) can come over for lunch the next day and take care of my leftovers! And Deb, thanks for the Mango tips! My Mango definitely wasn't ready. It thought they were supposed to be firmer. It wasn't sweet. Even my fruit loving daughter spit it out. Thanks for the help guys! Clearly, I need as much of it as I can get!!

When I roast cauliflower I always make double the amount I need for dinner.
