Lurker needs lunch help please!!

I'm about to start a new job Monday that requires me to spend LOTS of time in the car. Most days, I'll be in the car at lunch time with no microwave/ refridgerator in sight. I need some lunch ideas of things that can be packed and eaten easily without a heating source. I can obviously keep a small cooler in the car (and I do usually anyway b/c I pump for my son that I'm still nursing) but I'd have to either eat the food cold or not need to keep it cool. Any thoughts?

I know you've been around for a little while so you're probably on phase 2.
Cathy has great ideas, I'll just chime in some additions. One of my favorite sandwiches is cucumber slices, a thin layer of light mayo & a dash of Lawry's seasoning salt. Crunchy, and gets those veggies in. Packing sandwiches in ww wraps or pita halves can keep things neat. And fresh fruit salad would be easy to throw in a container or baggie and eat in the car too, I would just leave out the bananas so things don't get mushy.

My dh has a job where I'd say he spends about 5+ hours a day in the car going from one meeting or job site to another. So we've been packing his lunches for almost 3 years. Standards are:
some type of sandwich everyday - turkey, ham, chicken, etc. w/the usual toppings - cheese, lettuce, tomato, pickle, sprouts, etc. Wraps or pita are the easiest to eat while actually driving.
yogurt - I make big batches of peanut butter or fruit flavored yogurt and then put them in a tupperware. Just don't forget a spoon! I send bean salad or a veggie pasta salad (both have a vinegrette style dressing, so they do need to be kept cold, but its not like they are mayo based, so it doesn't worry me as much). We will often do salad as well - I pack the lettuce/veggies in one and then the dressing in another and he mixes when he is ready to eat.
String cheese, nuts, cereal bars, Triscuits, celery/carrot/pepper sticks, oranges, apples, grapes, etc., dried fruit, deviled eggs, whole grain pretzels, sugar-free jello or pudding cups. I'll often back him things we've made during the week like muffins, baked oatmeal, etc.
Really, the possibilities are endless!
