Vegetables in the morning???

Does anyone eat vegetables with breakfast?


The only thing I've thought of is putting shredded zucchini in my eggs - I've tried the zucchini pancakes several times and didn't like them either time - though I really wanted to!!!


I'm open to any ideas!!!

Still thinking of more things I do:


Chopped cherry tomatoes &/or cucumbers in cottage cheese

Grilled ham & cheese with tomato (open faced with cheese melted on top or grilled in a pan)

Honestly, I almost never do veggies in the morning. The only time I do is the rare occasion I have an omelette (which is generally pretty rare because I don't like eggs - but if we go out for breakfast its on of the only SBD-friendly options) So I'd say I eat veggies in the morning maybe 6 times a year?

I try and keep some roasted veggies on hand (particularly red peppers and onion) and I'll eat those with my MS sausage pattie.

I think the only way I will be more successful with vegetables is to spread them out over the entire day!!

It definitely helps to spread them out. I think of myself as a big veggie eater (part of just being a big eater of everything), but I sometimes can't cram enough in either and have to resort to the dreaded V8 (or worse yet, the organic knock off I make myself drink instead).

I mix mushrooms and sometimes brocolli in with my eggs in the morning, but that's about it.

Ha! I am very familiar with the gagging noise uttered by husbands- probabaly the same one I get when I eat tofu!

IT's hard for me to get my veggies in with breakfast. I can only go with omlets so much (peppers, onions, tomatoes). I do NOT like V8, I nearly gag every time I try it-so that's out for me. I end up trying to spread my veggies out thru lunch and supper. Usually if I can have a big salad I don't have a problem getting those veggies in!!
