Sweet Potatoe question

I know very little about sweet potatoes but I'm going to try to start cooking with them. I've found a few recipes I know are legal, but I found this one that I'm not sure about. Here it is with the changed I know about. And if anyone has any good recipes they'd like to share, I'm sure grateful for the help!

SWEET POTATO PUFF

2 1/2 to 3 lbs. unpeeled sweet potatoes
1/2 c. unsweetened orange juice (This is where my question is. I know I can eat an orange, can I juice a few to get unsweetened juice for this recipe?)
1 tbsp. butter, melted (Smart Balance)
1 tbsp. sugar (Splenda)
1/4 tsp. coconut extract
1/8 tsp. grated orange rind (I assume this is ok?)
1/8 tsp. pumpkin pie spice
2 eggs, separated

Cook sweet potatoes in boiling water 20 to 25 minutes or until tender. Let cool to touch; peel and mash with a fork. Combine 3 cups mashed potatoes and next 6 ingredients, stirring well.

Beat egg yolks until thick and lemon colored; stir into potato mixture.

Beat egg whites (at room temperature) until stiff, but not dry. Gently fold into potato mixture. Spoon into an ungreased 1 quart souffle dish.

The juice is a no, you can use lemon and lime juice only, not orange because of the high sugar. But you can substitute orange flavored Crystal Light, I've done that in many recipes and it works just fine. The orange rind is fine.

I assume you mix the crystal light with water?

Yes - you make the Crystal Light according to the package directions and then just measure the liquid like you would juice.

Here's the mashed sweet potatoes I've been making lately. We all love these. I'm planning to make them for Thanksgiving next week.

Mashed Maple Sweet Potatoes
Source: Better Homes and Gardens

3 medium sweet potatoes, peeled and quartered
1/4 cup maple syrup or maple-flavored syrup (substitute sugar-free maple syrup)
2 tablespoons margarine or butter (substitute Smart Balance Light)
1/4 teaspoon salt
1/4 to 1/3 cup half-and-half, light cream, or milk (I just used fat free milk)

In a medium saucepan cook potatoes, covered, in a small amount of boiling water for 30 to 35 minutes or until very tender; drain. Mash with a potato masher or beat with an electric mixer on low speed. Add maple syrup, margarine or butter, and salt. Gradually beat in enough half-and-half, light cream, or milk to make potato mixture light and fluffy. Pipe or spoon potato mixture onto serving plates. Makes 6 side-dish servings.

Ooooo!!! I'm going to make these tonight! My in laws are here and I'm making a roast. (MIL's request.) She's asking for potatoes... I hope she likes this. :)

I sure hope you like them, Jammie!!! I like this recipe because I usually keep all of the other ingredients on hand. The maple syrup gives it just a hint of sweet maple flavor, but not too sweet. Let me know how it turned out!!!
