Sweet Potatoe question

I know very little about sweet potatoes but I'm going to try to start cooking with them. I've found a few recipes I know are legal, but I found this one that I'm not sure about. Here it is with the changed I know about. And if anyone has any good recipes they'd like to share, I'm sure grateful for the help!
SWEET POTATO PUFF
2 1/2 to 3 lbs. unpeeled sweet potatoes
1/2 c. unsweetened orange juice (This is where my question is. I know I can eat an orange, can I juice a few to get unsweetened juice for this recipe?)
1 tbsp. butter, melted (Smart Balance)
1 tbsp. sugar (Splenda)
1/4 tsp. coconut extract
1/8 tsp. grated orange rind (I assume this is ok?)
1/8 tsp. pumpkin pie spice
2 eggs, separated
Cook sweet potatoes in boiling water 20 to 25 minutes or until tender. Let cool to touch; peel and mash with a fork. Combine 3 cups mashed potatoes and next 6 ingredients, stirring well.
Beat egg yolks until thick and lemon colored; stir into potato mixture.
Beat egg whites (at room temperature) until stiff, but not dry. Gently fold into potato mixture. Spoon into an ungreased 1 quart souffle dish.
