More on steel cut oats

 I cooked steel cut oats in the crockpost last night.  I turned it on kind of early because I was sleepy.  My crockpot has a timer, so when the cooking time is done its goes to a warming temp.  I knew they wouldn't burn.  I cooked them on low for 6 hrs, then they warmed for 4 hrs.


Anyway, when I checked them this morning, the top layer had formed an actual crust.  It reminded me of the texture of bread pudding with crusty top layer and soft underneath.  Another way to describe would be like a casserole topping when you have the crunchy bread/butter type topping.  Texture-wise, it was SO delicious.  I only put salt and a pat of Smart Balance in them initially so it was hard to get my toppings completely mixed after cooked.  I am going to try it again and this time I am going to put some vanilla extract, spices and a little splenda in the crockpot so the flavors meld. 


Does anyone know an actual recipe or cooking method that will help me get this texture again on purpose? 


Otherwise, I will just try to repeat what I did last night.

I get that yummy crust every time I make them in the crock pot (which is like every other day).

Sounds like I need to get a smaller crockpot so I can give this a try! Mine is HUGE, so I don't think it would work so well. I've just been making mine on the stove.

Has anyone ever tried adding fruit the night before? I think apples would hold up well, but I would like to try blueberries or bananas. I'm wondering if it would change the way they cooked too much.

I don't think I would try the bananas in the crockpot, Katy. I did that once when I made them on the stove and the bananas were just mush after a few minutes. Great taste, but definitely mushy.

I've got to try the steel cut oats in the crockpot. I keep burning them when I make them on the stove. I guess I turn the heat up too high and the milk starts to stick to the bottom of the pot.

I make them with water in cp overnight.


I don't think I would add any fruit until morning.

I've cooked them both ways, in the crockpot and also the stove top.


The crockpot overnight gives you a much creamier texture -- almost a milky texture with the crust on top --

I made them this morning on the stove and when done, I added 1 tbsp. all natural peanut butter and a little splenda....YUMMY!!!
