DYK Yes please Rebekah, I would love your cobber recipe
DYK and I think my "new" topping was pretty good -- of course, not the butter/brown sugar good, but for a SF substitute, I think this could replace -- DH liked it
DYK I'll post in the recipe section, someone else may like to try it too
DYK I'll just post this recipe here, since there are parts of it that aren't so legal?
DYK Although, some ingredients could be just omitted, or substituted?
Berry-Peach Cobbler with Sugared Almond
Filling:
3 (6oz.) packages fresh blueberries (I used frozen)
3 (5.6oz.) packages fresh blackberries (I used frozen)
3 medium peaches, peeled and sliced
Cooking spray
2/3C granulated sugar (sub Splenda)
2 1/2T cornstarch
3T fresh lemon juice
1/8t salt
Topping:
4.5oz. All-purpose flour (about 1 cup) sub ww pastry flour
1/4C granulated sugar (sub Splenda)
2T cornstarch
1/2t baking powder
1/8t salt
6T chilled butter, cut into pieces (use Smart Balance Light)
1/2C half-and-half (use fat-free, next time I may just try skim milk)
1/3C sliced almonds
3T turbinado sugar (did not substitute)
1T egg white
Remaining Ingredient:
4C vanilla fat-free ice cream (sub sf/ff vanilla ice cream)
Preheat oven to 350.
To prepare filling, combine blueberries, blackberries, and peaches in a 13X9 baking dish lightly coated with cooking spray. Sprinkle 2/3C granulated sugar, 2 1/2T cornstarch, juice, and 1/8t salt over fruit; toss gently to combine.
To prepare topping, weigh or lightly spoon flour into a dry measuring cup; level with a knife. Combine flour, 1/4C granulated sugar, 2T cornstarch, baking powder, and 1/8t salt, stirring well. Cut butter into flour mixture with a pastry blender or two knives until mixture resembles coarse meal. Add half-and-half; gently knead dough just until moistened. Drop dough by spoonfuls evenly over top of filling. Combine almonds, turbinado sugar, and egg white; sprinkle over top. Bake at 350 for 50 minutes or until topping is browned. Let stand 10 minutes. Serve with ice cream.
Yield: 12 servings (serving size: 1 cup cobbler and 1/3C ice cream).

DYK Thanks Rebekah -- I'll add this to my recipe list to try
DYK it doesn't look too bad, looks like anything can be subbed -- though I don't know what Turbinado sugar is!
DYK also looks like this makes a HUGE batch!
DYK Ha-ha...I didn't know what the turbinado sugar was either?
DYK It's the raw sugar that has bigger crystals and usually has more of a brownish color to it?
DYK I found some at Wal-mart in a box with individual packets?
DYK It didn't take much?
DYK But I don't know what you could use to substitute for that cause it needs to be in a crystallized form?
DYK It looks like a lot, but it cooks down?
DYK I can usually get 7 or 8 servings out of it?Rebekah

DYK I hear you on sporting event food- it is definitely no better at the pro games?
DYK the last three Phillies games we went to I packed our meal?
DYK If you are looking for ideas, in the past I have popped popcorn, roasted chick peas,
dyk, I actually just got up the courage to check my work email.
dyk, IT WASN'T MY FAULT. IT WASN'T MY TURN TO REQUEST THE CHECKS!!!!!!!!!!!!!
dyk, it appears that we have begged some people to help us out, but even though it wasn't my fault I'm currently wording a very apologetic email to my boss with a list of suggestions on how the problem could be avoided in the future. Although, our previous solution seemed to working well until this month.
dyk, I'm super relieved that this wasn't actually my fault, but I have a feeling that this will end up being my fault because the supervisor who was in charge left and the senior who should have requested the checks is pregnant and they don't want her to leave so they won't do anything to offend her.
dyk, even though it wasn't my fault, I'm feeling super guilty and super responsible.
dyk, mark my words...there will NEVER again be a late check while I'm on this client. NEVER.
