DYK I know we'll both enjoy getting away and having fun in the park?

DYK We both love pretty much the same rides and we'll enjoy the time just being together?

DYK Maegan definitely wants to continue with marching band? She has always enjoyed it and loves the football games and the competitions?

DYK It looks like we will let her march this next year, but will tell her that at the first sign her grades are going south, she is out?

DYK I have told Bruce that I didn't care if we are right in the middle of football season...if her grades are not good enough, we will have to pull her out?

DYK This is pretty much her last chance...if she doesn't do well in her current school this coming year, we will have no other choice but to look for a private school to send her to next year?

dyk I would do a lot of cold appetizer type foods because of the time of year.

DYK I have a really good veggie lasagna recipe if you want it, Deb?

DYK I think Cathy posted it a while ago...the one from the Gia Russa website?

DYK Here it is..in case anyone is interested?

No Boil Four Layer Whole Wheat & Vegetable Lasagna
Gia Russa website

1 box (9oz) Gia Russa Whole Wheat Lasagna (DO NOT BOIL)
1/2 Jar (24oz) Gia Russa Tomato Basil Sauce
2 eggs
1 tall container (32oz.) ricotta cheese
3C shredded mozzarella cheese
1C grated parmesan or romano cheese
1T dried parsley flakes
1 medium sized zucchini's or 3 small (used 3 medium)
1 (8oz) baby bella sliced mushrooms
1 (6oz) pkg baby spinach
2T olive oil
1/2 cloves fresh garlic (minced)
add'l grated parmesan or romano cheese

Preheat oven to 400. Spray a 9X13 glass baking dish (use pampered chef dish)with a non stick cooking spray.

In a large bowl combine: ricotta, mozzarella, grated cheese, eggs and parsley; set aside.

In a large skillet, heat olive oil & saute garlic; add zucchini, mushrooms & gently saute for approximately 2-3 minutes. (Be careful not to overcook, vegetables will continue to cook while baking); set aside.

To assemble, cover the bottom of the baking dish with 6-7oz. of sauce.

Layer 4 uncooked noodles (slightly overlapping), 1/3 of the ricotta mixture, 1/3 of the vegetables and 1/3 of the spinach. Drizzle approximately 6-7oz. of sauce over the vegetables. Create the next layer beginning with the pasta sheets. Gently press down on each layer until completed. Repeat layering instructions until you have created 4 layers. Top with 6-7oz. of sauce, reserving the remaining sauce.

Cover and bake for approximately 45-50 minutes (We suggest covering with aluminum foil).

Remove from the oven and let stand for approximately 15-20 minutes before cutting or serving. Heat remaining sauce and serve with lasagna.

Helpful Hints: For best preparation, use a glass or ceramic baking dish sprayed with a non-stick cooking spray. If using a foil pan, please allow for an additional 10-15 minutes cooking time.
