Im a little curious about cooking with wine. It seems that if you add wine to a recipe that will be cooked, the alchohol will cook out and even at that a minimal amount of the wine will be absorbed. If we leave the sauce off afterwards I wonder if it would be okay or if I should just wait one more week for phase 2.

i think it's fine...there are actually phase 1 recipes with wine (cracked pepper steak)
