I have a sweet tooth that won't quit, and being in Phase 1 is SO limited, especially with desserts. I think I've come up with a good Phase 1 recipe, but I need the thumbs up from someone more experienced than I am:
Make one box sugar-free Jello using 3/4 cup boiling water and 1 cup ice. Stir til most of the ice is melted, and remove unmelted ice.
Add one cup of regular Cool Whip. Whisk in. Chill till firm, then whisk again.
This makes 4 generous servings with the following nutritional info (per serving):
Calories = 60
Fat = 3
Carbs = 4
Sugar = 2
Protein = 0
Fiber = 0
