Today's menu is:
B: omelet (1 egg+2 whites), slice of 2% cheese, red pepper strips (2), green onions {made an omelet} & topped with a bit of salsa. 6 oz of V8, 2 cups of coffee + 2 TBSP 1% milk. 20 oz of water
S: LF Mozarella stick
L: LF Corned Beef (1 oz), wrapped in 2 lettuce leaves & 2% cheese slice; salad (all okayed veggies), 1 c. FF Vanilla yogurt w/ cinnamon & 7 almond slices. Might spread a bit of mustard on my "sandwich"
S: cucumbers & 2 TBSP Roasted Eggplant Hummus
D: Winter Bean Soup (I'll post the recipe tonight) & salad with olive oil & vngr dressing.
S: SF jello

Is this too much? Should I change something? I am just worried when I weigh in on Friday that I'll have gained weight instead of lost! Thanks for reading & all the help you beach bums have given me!

Forgot to add - that I have been drinking Metamucil (SF) before each meal & have been taking a multivitamin, Vitamin C, calcium & Omega-3s. And drinking 2-3 quarts of water. More like 2 on the weekends & 3 on the weekdays.

Dh has been great! A little skeptical, but great. Nothing else in the house is calling my name, like they used to. Just on Day 2 those Pancakes looked so(oooooooooooooooo) good!
