I finished week two last Wednesday and had lost 14 lbs. total at that point. I have lost another 4 lbs. this week, even while adding carbs (low carb toast in the morning and an apple for the afternoon snack each day), for an 18 lb. loss since Jan. 5th. I plateaued for a few days at 16 lbs. but made sure that I kept strickly to the food list and I am losing again now. I have found this regimen relatively easy to stay on - other than being tired of chopping vegetables. :)

My goal is to lose 120 lbs. in 2004 so I am 15% of the way there!!!

Typically, I ate either a boiled egg, a couple of strips of bacon and a sliced sweet red pepper or I made an omelet with onions, mushrooms, ham and cheese for breakfast. Lunch was usually a salad with grilled chicken. For dinner, I would cook a couple of veggies and eat some kind of lean meat (a baked loin pork chop, salmon, chicken breast, etc.). Sometimes I would switch and have my dinner menu for lunch and the salad and grilled chicken for supper. I ate pecans for my snack each day and drank lots of water. I tried to vary the veggies and meat as much as possible so I didn't get bored. I also emptied my house of anything I couldn't eat on the diet and take a water aerobics class twice a week.
