Okay so I was on atkins for about a week and a half. I just could not stomach all the red meat and cream etc. I learned my lesson about the sugar free candies and have been avoiding those. Today is technically my first day on SBD although I have strayed a little away from akins a couple days ago. I am commiting to the SBD from here on out. I don't want to jump from diet to diet. I still need to figure out my goals and exercise plan. Just wanted to post and kind of keep myself accountable. Thanks, Sarah



By the way.....On the Atkins forum someone posted the best recipe. It was cauliflower soup. On atkins it is made with Heavy cream and Full fat cheese but we could substitute those for fat free half and half. You might want to check the recipe their....but here is how I remembered it.

1 head of Cauliflower

1 can chicken broth

1/2 cup heavy cream (could use 1/2 and 1/2 for SBD)

1 CUP H2O (when I made it I think I used to much h2o so I would try a little less)

salt/no salt and pepper to taste

Cheese (I use cheddar)

Steam Cauliflower until very soft. Put in blender with the can of chi. broth. Puree. Put in large pot. Add cream or 1/2 and 1/2 and h2o. Add some cheese while it simmers than add some more cheese to the top of soup after it is served. Oh my gosh it is so good. Tastes just like creamy cheesy potato soup. None dieters love it too. :)

Thanks, that sounds really good, and easy, too.

I am so lazy with cooking that I never feel like dealing with chicken and whatnot, so I end up getting a lot of my protein from light cheese (and vitamins, which I take religiously on the orders of my dad, who is a doctor). I try to get lean meat in though wherever I can. But this soup sounds great. SBD has gotten me to be such a vegetable addict. I eat raw broccoli whenever I have a craving for anything!

Good luck on your switch, and let us know how it is. My sister, who is MUCH heavier than I was to begin with, is on Atkins, and I know over the long-term, she is likely to just put the weight back on. If I have some testimony from someone who's switched, maybe I can lend her my copy of the book and get her on the Beach!

Thanks for this recipe...I think I'll try it with skim milk instead of half n half, and I think that will taste good, too!
