Stuck for lunches

Stuck for lunches

HI ladies (and any gentlemen as my boyfriend pointed out it may not be all women lol). I am having a little trouble coming up with lunches. I am really picky and really do not like salad at all. I picked at my salad today so I didn't have a filling lunch and was starving by 3:30 when i got home. I know at this point that will be my downfall that I will want to pick at things I shouldn't have. Tomorrow I plan on having 1/2 cup of cottage cheese, probably jello and slices of cucuumber. I am also really picky when it comes to food and so I am limited there as well. Any ideas? Thanks so much for help any one can give me. I'll list things I do like if that will help: green beans, wax beans, cauliflower, cottage cheese, cheese, some meats, cucuumbers and those sort of plain like things.

Let's see here - Cottage cheese ... I make a big bowl of cottage cheese and put in cubed up cukes, cherry tomatoes cut in 1/2, sliced scallion and some salt & pepper.

Well, as long as you keep in mind that for lunch and dinner you are required to eat a minimum of 2 cups of veggies (and they must be from the foods to enjoy list) I don't think it needs to be salads. Maybe you can try some of the dinner veggie receipes and take that along with a dose of protein (chicken maybe). I don't care for many of the lunch recipes in the book, so I started doing things like just taking 2 cups worth of salad and some leftover protein (chicken, beef, etc) from the night before. A suggestion though, eat the veggies first!

Thanks for both of your help. Now I missed the part in the book where it says a minimum of 2 cups of veggies so when you say this, do you mean a minimum of 2 cups total or per meal? Thanks!

The requirements are 1/2 cup with breakfast and 2 cups with lunch and an additional 2 cups with dinner.

I second the hummos with bell pepper strips or celery sticks as a snack! Though I do both the V8 and the veggie snack. It's too good not to :)

And as was answered, yep...2 cups for lunch and another 2 cups for dinner. That's why this diet is considered so healthy, it doesn't allow for you to gorge on just protein without getting your veggies in too!

Errin use large romaine lettuce leaves as your "bread" and make sandwiches... or fill with tuna salad or chicken salad and made bundles with them.

I had some left over taco dip from a party I had over the weekend. I spread a little less than a cup of the dip ontop of about 2 cups of Salad (in a bag). It's was mmm good. I could eat this for lunch everyday. And I do not like salads. You can eat this salad hot or cold. If cold see above. If hot - carry dip in a separate container. Warm up in microwave and dump on top of your salad/lettuce. If you want more protein, you could add ground beef/turkey to it.



Recipe

1 can of refried beans

1 container of Sour cream

1/2 pkg of dry taco mix

1 jar of salsa (I use medium for parties, and spicy for myself)

1 pkg of Mexican shredded cheese

scallions (optional)

jalepenos (optional)

Since this is for individual salads, you don't have to use all of everything (if that makes sense). Just mix to your own specificatin and taste.

Normally, the beans would be the first layer. The second layer is the mix of the sour cream and taco mix. The third layer is the Salsa. The fourth layer is the cheese. If you want the optional stuff, I usally put on after first layer.

I also made some Cajun and regular meatballs but they would be disqualified in P1 due to the breadcrumbs and the BBQ and Peach Preserves Sauce.

So here is a variation of it. I don't cook to specific measurements. I usually just throw everything together and call it a day. BUt I'll try.

Non Spicy Regular

1 lbs. Ground turkey/beef or chicken (your choice)

1/2 c. Chopped Onions

1/4 c. chopped green peppers

1 egg

1 tbsp parsley

Salt and pepper

1 tbsp Worschester Sauce

Cajun Meatballs

Ingredients above plus

2 tbsp Cajun Mix

1 tsbp hot sauce

1 tbsp Chili Sauce

Sauce

1 1/2 c. of tomato Juice

1/4 c. tomato paste to thicken

1/4 c finely chopped onions

1 tbps worshchire sauce

1/4 c chili sauce (optional)

Splenda to taste ( that is if you want a sweeter tasting sauce)(optional)

salt and pepper to taste

If this is too much you could always use spaghetti sauce (Ragu or Prego, etc..)

Shape the meatballs. Then I brown the meatballs a little. You can bake or crock pot these. To bake place meatballs and sauce in pan and cook for about 45 minutes to and hour. If crockpot - same as above but simmer on low for about 2 - 3 hours.



Serve with salad or on salad or with grilled veggies.

Other Ideas...

*Tuna fish with sliced cucumbers

*Salmon patties w/ zuccini, broccoli and cherry tomato saute (Saute is lite soy sauce and minced garlic, salt and pepper to taste)

Just beware - refried beans are pinto beans and not allowed on Phase 1.

A few more suggestions:

I send my DH to work with lunch every day. One of his favorites is: canned white meat chicken (found in the tuna aisle), tossed with an assortment of chopped veggies (cucumber, red pepper, celery, radish, green onion), add black beans or garbanzo beans, olives, balsamic vinegar.

Another favorite is Thai turkey rollups: deli turkey rolled up with a green onion and peanut sauce.

Thanks Cathy... Just realized that I wasn't specific. At the party I did use refried pinto beans but I just learned that you can buy refried BLACK beans at the grocery store.
