Since we eat venison 95% of the time we eat red meat I was curious as well. I found this information on the internet and yes it is actually lower in fat that chicken. My cut and pasting didn't come out very well but you can find alot of info on the internet about venison just type in venison nutrition and there are all kinds of sights. My question is....are those kidney beans allowed in phase I? Sometimes food is in recipes for phase I but not on the list. A little confusing.
In general, game meat is leaner than meat from domesticated animals. The small amount of fat on game meat is strong tasting, so you should remove it before cooking. For maximum tenderness, cook slowly — either braise in liquid, or roast and baste frequently.
