As long as we are talking homemade, you can have chicken salad made with white meat, and use only a bit of real mayonnaise. Ham salad is questionable - probably as long as it is very lean ham.
Here are is my favorite recipe for chicken salad (without any mayo)that is P1 friendly:
fresh chopped chicken breast or 1 can white meat chicken breast (excellent product found by the tuna in the store)
chop up an assortment of veggies: cucumber, red bell pepper, scallion, radish, carrot, etc.
add a can of white beans, black beans or chick peas.
sometimes I add small chunks of low fat cheese.
mix with olive oil and balsamic or red wine vinegar.
