Hello, again...sorry bout all the messages. My DH and I really like this chicked dish cooked in the pressure cooker with chk breasts, plain yogurt, chicken broth, veggies, and curry spices. Is this OK? I just can't figure out whether dairy is OK with protein and how much is allowed at dinner. THis is one of my husbands favorite recipes and having it would cheer him up on day 2. We're carb addicts so this is pretty tough ;)

My husband is *trying*. Hopefully we'll lose some newlywed flab. We got married in Sept. and moved to the east coast to start new jobs in November. We've each put on at least 10 pounds since the move. I feel like I have two choices. 1, keep doing what I (was) doing: eat bread and olive oil before every meal, lots of wine, and cookies practically every afternoon at work in the break room. Then, gain more weight, eventually have kids, and wake up in 5 years 30 or 40 pounds heavier. Or my other option, 2, SBD boot camp! Kick the carb cravings and listen to my body. We love to cook and enjoy all foods, particularly grains, so these two weeks are tough. Thanks!

and the recipe is below. Here's how I changed it:

-Use bonless, skinless breasts, saute in EVOO, w/o flour.

-Remove, add in veggies of your choice. I like garlic, onions and peppers. Saute.

add back chk, add cumin, and other seasonings (I like chili flakes)

add yogurt, lemon juice, and broth.

***add about 1 cup navy or other white beans*** , this will help thicken the sause since you're not using flour.

-Mix, put on lid, bring to high pressure for 12 minutes. Decrease pressure naturally.

-We do not use the eggs, so I don't know how this effects the recipe. It just sounds kind of gross :)

-We served with fresh steamed broccoli. The sauce was excellent. My husband actually pureed it a little with a hand mixer to break up the beans a bit more. It worked great! And heats up really well in the microwave.

From The Pressure Cooker Cookbook

6 Chicken breast halves

1/3 cup Flour

1/4 cup Olive oil

6 Green onions, minced

30 milliliters Garlic, crushed

1/3 cup Parsley, minced

1 tablespoon Dried spearmint

1 teaspoon Ground cumin

1/2 cup Chicken broth

3 tablespoons Fresh lemon juice

8 ounces Yogurt

1 teaspoon Salt

1/2 teaspoon White pepper

2 Egg yolks

1 tablespoon flour

Steamed rice and vegetables, to serve

Dust chicken pieces wiht flour, shaking to remove excess flour. In pressure cooker, heat oil. Add chicken and saute in hot oil until browned, turning.

Transfer chicken to a platter and reserve. Add green onions, garlic, and parsley and saute in hot oil 2 minutes. Add chicken and stir. Sprinkle with spearmint and cumin. Add broth, lemon juice, yogurt, salt, and pepper. Stir well. Secure lid. Over high heat, develop steam to high pressure. Reduce heat to maintain pressure and cook 10 mins. Release pressure according to manufacturer's directions. Remove lid.

Place chicken in serving dish. Ladle out 1/2 cup of hot broth and whisk into egg yolks. Add flour or potato starch to yolk mixture. Stir into cooking liquid. Cook, stirring, until thickened. Serve with steamed rice and vegetables.

Serves 6.
