Newbie with recipe changes questions

DH and I have decided to start SBD tomorrow. I've already been to the grocery store and have been cooking up a storm for a few hours. I've made the savory chicken and the broiled flank steak. DH and I bring our lunches to work, so I want to get some meals ready this weekend for the week. I wanted to know if it's ok that I change some recipes (using still allowed ingredients). For example, I just made the quiche cups to go but used spinach and mushrooms and as a cheese I used parmesan (which it says there it's allowed). Is it also necesary to use egg mixture? I read that I egg + 2 whites can substitute. Can it also be all eggs or is that bad? Also I made the stewed tomatoes but added broccoli and mushroom to the mix (we love mushrooms). The other change I would like to make, and hope it's ok, is to have the big meal for lunch and have salads for dinner. We are used to having our big meals for lunch instead of dinner.

PS. Is there a limit to how much skim milk one can drink daily during this phase?

As for the swapping of lunch for dinner idea...I think that would be ok as long as you are having some sort of protein w./ you salads (chicken ceasar, steak ceaser...you get the picture). Also, don't forget that if you are using store bought dressings they need to be under 3grams of sugar per serving (usually 2 T is a serving).
Crystal Light is fine...thankfully!!! I also make green ice tea (6 tea bags - 2 quarts water and 6 T splenda...I am trying to cut back on using that much splenda but I can't yet).
I think if you are using skim milk there is no limit. However, I am not 100% sure on that one.
I am on Phase 1 as well and there is a lot of support and help in this board if you ever need it :)
