I would love some recipes for phase 1 ricotta desserts. I love anything mocha or chocolate, but would also try other ideas. I'm a newbie, so I need the directions, too.

I like mine with cinnamon and splenda, or sometimes I'll add banana extract and walnuts. Yummy! :)

Just stir it! I buy the best (most expensive) lowfat ricotta I can find. I think it tastes better than my store's brand. Here are some ideas:

Chocolate Creme:

unsweetened cocoa powder

vanilla extract

cinnamon

1 pakcet splenda

Lemon Chiffon Creme:

lemon or lime juice

vanilla

1 packet splenda

Tiramisu:

almond extract

slivered almonds

cocoa powder

vanilla extract

1 packet splenda

These are my specialty! Here are some ideas:

I always whip these up after I've prepared the dinner & salad. This is the last thing I do (while drinking the Metamucil "cocktail").

First, keep all your extracts close by. I have a shelf over my sink, and on it I have vanilla (pure), almond, banana, coconut, maple extracts.

In addition, have the following: sugar-free chocolate syrup, walnuts or pecans, slivered almonds, packets of equal, FF half & half, large tub of ricotta (I buy Polly-O, think it's the best, cinnamon, choc. chips (in freezer),Smuckers FF peanut butter (in fridge).

I always use the same 2 dessert bowls. I know how far to fill them with ricotta to come to the measurements from the book (saves time and measuring cups!) I never use measuring spoons either for the extract. I just splash some on.

Once assembled, they go back in the fridge till dessert time.

Variations

Banana bread: Banana extract, vanilla (a splash of each), one packet equal, ricotta cream & about 1T FF half & half. Mix all with a spoon. Top with chocolate chips and/or walnuts or pecans.

Mexican delight: Chocolate syrup, ricc. cheese, FF half & half, splash of vanilla, dash of cinnamon, some equal (use less because syrup is sweet)

Almond: pretty much the same, add splashes of almond & vanilla extract, top with almond slices that you've toasted on baking sheet in oven for a few minutes.

Coconut: use vanilla + coconut extract, top with chocolate chips.

Reeses: cocoa or choc syrup, teaspoon of peanut butter, splash of vanilla (makes it easier to stir), equal as needed.

Be creative~~try chocolate mint, chocolate almond, mocha (add instant coffee to chocolate, omit cinammon) etc.

Our favorites are banana, mexican delight, and almond.
