Well, we have a restaurant here in Kansas City called Chipotle. I order a burrito bowl with lettuce in place of the white rice. Then they pile on grilled chicken or steak, black beans and fresh salsa. It's all good for us!! They usually put sour cream and cheese on them but of course they are not low fat. I take it home and put my own low fat sour cream, cheese or just low carb ranch dressing. My husband and I also make our own version of this at home using the same ingredients.

Other great restaurant choices:
Fajitas! (hold the tortilla, refried beans, sour cream, and go LIGHT on the cheese - ask for on the side.)

One week into phase one this is what I found easy to make:

What was quick & easy to prepare?

*** Easy salsa chicken, balsamic chicken is a snap to do too, made broiled salmon today and was super easy too

What did/do you bring to work?

*** I've brought to work all of the main meals and even SF jello and the snack (string cheese or cherry tomatoes. I have my salads for dinner because I don't want to get the lettuce all wilted.

What can be made in large quantities to eat all week or to freeze half for another week?

***Chili of course, the quiche cups to go, also every main meal I've made I've frozen and taken to work the next day. Right now I have in the freezer the soy ginger tilapia, easy salsa chicken and the salmon ready to just be put in a bag and taken to work.

I have my salads for dinner because I don't want to get the lettuce all wilted


Here's a trick I used to do.... Put the lettuce in zip lock bag with paper towel inside to absorb moisture.

Before I started, a friend on SBD came over for girls' night. She brought a massive salad for us to share, and I made a chicken dish that was super easy.

Bake frozen chicken tenderloins (come in a bag) in a 350 oven for 25 minutes or until almost done. Top with spaghetti sauce (with no sugar added) and a slice of part-skim mozzarella. Bake for another few minutes until chicken is done and the cheese is melted.

Add another steamed vegetable, or grilled peppers, and you have a meal!

Fat free refried beans with salsa on top. Sprinkle lo-fat cheese on this and microwave... yummy!! Michelle (hope this is OK...LOL)

Just a reminder for newbies - Refried beans are made with pinto beans and are a phase 2 food.
