Let's help those in Phase one by sharing the meals we loved the most while in phase 1....
What was quick & easy to prepare?
What did/do you bring to work?
What can be made in large quanities to eat all week or to freeze half for another week?

Chicken Parmesan - really easy - baked chicken breast(s) with a little olive oil. Top with sugar free sauce (the Carb Cravers Ragu sauce is what I use) and Part-Skim LF shredded mozzarella. Sometimes I throw on some mushrooms too.
My version of lasagna - layer mushrooms (I enjoy portabellas) and broccoli (cut "sheets" by cutting with the stock up and slicing down rather than the usual way of cutting the crowns) with sauce and cheese (see above). You can bake it or microwave it - I've done both ways.
Both are great! I'm also a big fan of egg beaters anytime with veggies and cheese!
8 days on phase one - started at 372, this morning 361.6 - feeling great!

I do a chicken parm with frozen chicken breasts. No need to defrost them before baking. One less thing to worry about in the morning, and makes it a good last-minute dinner. The frozen, bagged chicken tenderloins bake at 375 for 25 or so minutes, then top and bake a little longer to melt the cheese.

What did/do you bring to work?
--I keep a bag of pistachios or other nuts with me because they're small and easily hidden (we're not allowed to bring snacks onto the sales floor with us).
What can be made in large quanities to eat all week or to freeze half for another week?
--Soup. Soup is your best friend, because you can make it up as you go along and make huge batches that will last you for awhile. Just start with some broth and experiment...thow in veggies, meat, spices, whatever you want.
