.... I do a chicken parm with frozen chicken breasts. No need to defrost them before baking. One less thing to worry about in the morning, and makes it a good last-minute dinner. The frozen, bagged chicken tenderloins bake at 375 for 25 or so minutes, then top and bake a little longer to melt the cheese. ...

What was quick & easy to prepare?
- One of the easiest thing I have found is frozen tilapia. At Sam's Club, they sell big bags of individually wrapped frozen tilapia filets. When I get home from work, I just drop a few in the sink to defrost (takes about 5-10 minutes). Then I toss them with a little olive oil, lemon (or lime), and whatever spices I feel like (usually salt, pepper, garlic, and chili powder). Then I either cook them in a frying pan or broil them. Either way, it takes about 2-3 minutes per side. Top with salsa (or sauteed mushrooms, or spinach, or whatever you like), serve with a veggie or two and you've got a great meal in less than 20 minutes. Once you get into phase two, wrap the tilapia into a whole wheat tortilla with some lettuce, tomatoes, cheese, salsa, and sour cream for a great fish taco!

What did/do you bring to work?
- Breakfast is usually hard-boiled eggs (prepared Sunday night for the whole week) or cottage cheese with cucumbers and/or tomatoes. Lunch is usually a chef salad, sometimes leftover soup. And I'll bring two of the following snacks: celery with pb (or hummus, or Laughing Cow), cottage cheese (if I didn't have it for breakfast), turkey and cheese roll-ups, cucumber slices, grape tomatoes, leftover veggies from dinner, mozzy stick. If I have room in my lunch box, I'll also bring bottled water - otherwise I buy it from the snack bar.

What can be made in large quanities to eat all week or to freeze half for another week?
- Soup and chili. I freeze individual portions of these for a quick lunch when I don't feel like making a salad.
