what kind of veggies actually *go* with breakfast??? My breakfast this week has been 2 eggs with ff cheddar in them (made omlet style). I gave the pan a spray of I can't believe its not butter, is that ok?? But, what veggies should I have with this??? Afterwards I thought maybe I could have added some chopped broccoli (my fav veggie) but I don't think I could have gotten a 1/2 cup in there.

I've read alot here about those quiche cups and might make them tonight to try. I also want to browse thru the recipe section for other quiche recipes.

I'm still trying to get the hang of this whole thing!!! Thanks for your patience!!

Hi Sue,

A typical British breakfast features sliced, broiled tomato on the side. Or you could make an omelet and pack it with peppers, mushrooms, tomato, or any other kind of veggie you like - even broccoli.

I also find scrambled eggs in a cup makes a great breakfast. I put eggs, a little skim milk, some lowfat Velveeta or other cheese, ham, and veggies into a microwave-safe mug and cook it on high for about a minute. Stir, add salt and pepper, and then microwave it for another 30-60 seconds until eggs are done to your liking.

I can't imagine any kind of veggie not "going" with breakfast. I had 3 dill pickles at 5:30am today.

I do a can of v-8 juice with breakfast, as recommended......It's not bad, I've heard others have just plain tomatoe juice as well.

Some ideas that work for DH& me--

A glass of Campbells's Tomato juice every day (6 oz. I think)

Spinach omelets --sautee some sliced onions (we like vidalia or sweet) in olive oil -- sometimes I add minced garlic also. Then dump about 1/4 to 1/2 bag of prewashed baby spinach (you can use any; I've found that this is best & easiest) on top and mix up till spinach wilts. Pour your egg + cheese mix on top, cook till you like it. Yummy!

We also had the creamed spinach from the SBD book the other night -- and I'm thinking poached eggs on top of them would be delicious. Really good!

Other days, I'll sautee some mushrooms, onions; add some tomatoes and/or ham, and pour egg mix on top of that.

I don't like peppers too much in the morning (or broccoli or asparagus) but those would be other ideas. Some posters to these boards put veggie leftovers from night before in their eggs.

I make omelets almost every day for DH (also on SBD). I use egg beaters and any veggie I happen to have in the refrigerator. I sometimes add LF cheese, spices like dill or italian seasoning. I also keep some lean ham in a ziploc in the freezer that I chopped up in the food processor - I just grab a few spoonfuls for omelets. DH says that no 2 omelets have ever been the same!! Variety is the spice of life!!

I like broccoli is my quiche cups. It is great in omelets and so are peppers. Mmmmm!!! If you think you can't get enough veggies in at B-fast just drink your V-8. It is whole serving anyways :) Hope this helps!
