Anyone know?  A woman I used to baby sit for (YEARS ago) used to brush boneless skinless chick breasts with dijon mustard and wheat germ...it was so good, and I want to try that as an alternative to bread crumbs.  Anyone know?

This info on wheat germ is from Sandy, the nutritionist on the official South Beach website:

wheat germ is the heart of the wheat kernel. It is high in vitamin E, folate, thiamin, zinc and magnesium. It has some very important nutrients for heart health. It is high in calories - 432 calories in 1 cup. It's one of those foods that is very nutritious but also has to be used with discretion because of the calorie content. You must be a wheat germ fan. I would hold off using it until phase 2. There are a couple of ways it can be worked into your meal plan on phase 2. One is to count 1 TBS as 25 calories towards the Sweet Treats 75 calorie per day limit. Another is to use 1/4 cup and count as 1 slice of bread. These are just a couple of ways it can be worked into phase 2.
