Bloated and not losing?...

I've been doing SB for 11 days now. I cheated once on Tuesday night of this week, but not at all since. I may be down 1 or 2 pounds, but that's it. My scale is pretty bad, so hard to tell the exact weight. TOM is also gone as of about 3 days ago. But yet I constantly feel bloated and like that's why I'm not losing. I'm not overdosing on sweets, nuts or cheese and am not constipated either. I am drinking tons of water.
Is this normal? Am I doing something wrong? Here is a sample menu:
breakfast: 2 spinach quiche cups (yummy!), 6 oz. can of V8 and coffee with a little skim milk
snack: 1 low-fat Mozz. cheese stick.
lunch: Turkey chili over salad (no dressing)
snack: 20 pistachio nuts and sometimes a few roasted chickpeas if I'm still hungry
dinner: some sort of stir-fry chicken breast with olive oil, lemon juice, veggies and whatever else SB friendly things I feel like putting in.
snack: Sugar-free fudge bar, little bit of natural peanut butter and yogurt mixture.
Is this ok? I don't understand why I'm not losing. I have about 35 pounds to lose, so something should be coming off after 11 days. Thanks!
