How is everyone doing today. It's day 2 for me and I had some turkey and green beans for lunch. (Egg beaters w/can bacon for breakfast). Nothing too exciting, but it's working for me. :-)

Hi Suzy.

Today is also day 2 for me.

Here is my menu

Breakfast 6am: 2 scrambled eggs with fat free cheddar, diced onions and diced green peppers with 2 slices of turkey bacon.

Snack 9am: 2 turkey rollups (lettuce leaf, 1 piece fat free lean turkey with a slice of fat free sharp cheddar and very little of reg miracle whip)

Lunch 12pm: 1.5 cups of lettuce with 3 oz of sirloin on top. Dressing was "Carb options" Olive Oil and a SF Jello

Snack 3pm (will be) celery with fat free cream cheese

Dinner 6pm (will be) Ground turkey burger with broccoli and side salad with cucumbers.

Snack 9pm (will be) SF popsicle or SF Jello with 1 tblspoon on light whipped topping.

I am still fairly new at this. It is a little difficult when I have a husband who hates veggies and 2 boys ages 8 and 3 who love all the junk. Good thing my daughter (7weeks) doesn't have an opinion on what she eats yet. lol!!

That sounds great Cathy! You're doing very well. I love those rollups. The first time I tried SB I had a hard time because I followed the book's suggestions for each day to the letter. I was exhausted with the cooking & shopping. I then found this board and discovered that those were just examples, and I can make my own choices within the guidelines. I am finding it much easier now to follow. It's great now that we can have dairy during P1, too!

I sympathize on the family members. My husband also won't easily eat "diet food" and I end up having to watch him eat things I can't have. He is getting better now about not bringing "trigger" foods into the house. I had a hard time resisting chocolate a few weeks back. LOL

My snacks today have been a cheese stick at 10am, and this afternoon I'm having 30 pistachios. Tonight I may have the SF Jello too, or some yogurt. I haven't decided on dinner yet. Either pork tenderloin & veggies, or some stir fry lean beef with veggies.

We can do it!! :-)

Today's been a tough day - I haven't been hungry at all, so I've been forcing myself to eat....I've been working out a lot lately, so that doesn't totally surprise me.


8AM - 6 oz V8, one egg fried in olive oil, 2 pieces turkey bacon


10:30AM - Coffee with 1/2 c FF milk


11AM - Sugar Free fudgesicle & string cheese (LOL, funny, I know)


12:30PM - 2 c salad with LF Three Cheese Ranch dressing


3PM - (will be) celery w/lt alouette & hummus, the 3 oz tuna w/lt mayo that I should have had at lunch...


5PM - (will be) Sugar free jello


7PM - (will be) Pork loin with mustard sauce & roasted asparagus


8:30PM - (will be) Ricotta creme - I'm feeling lemon zest today...

I'm going back to ph1 this week since I was bad over the w/e so I thought I'd contribute what I had today:


B = 2 scrambled eggs w/leftover oven roasted veggies & low fat cheddar cheese


S = Almonds & Coffee


L = (about 1/2 hr before lunch I had string cheese)


Tuna salad with lite mayo & celery

Hi everyone! I'm back on Phase 1 for a few days after being a bit bad. Here's what I've had so far today:

Brekfast

1/2 c Southwest Eggbeaters

3 Small zucchini hashbrowns

Crystal light

Snack:

Turkey deli meat (2 slices)

Lunch:

Leftover grilled chicken

SB Friendly Coleslaw

Snack:

6 oz yogurt

1 slice turkey deli meat

Dinner:

Haven't quite decided yet - maybe a bunch of roasted veggies and a turkey burger - depends on how much time I have later!

Good going Amanda! I know it can sometimes be hard to eat as much as we're supposed to when you aren't that hungry. I hope your appetite will improve in another day or two. Yes, the cheese with a fudgesicle sounds kinda funny, but hey...I love cheese and I love chocolate...so I can see it. LOL

What brand of fudgesicles do you buy? I was shopping for them last night but was frustrated since the sugar free ones mention "Just 4 net carbs" but then on the label it says 9 actual carbs. Maybe this doesn't matter since this isn't really a low-carb diet?

I am having pork also for dinner. I'd better get cooking! Hope you have a good evening!

I had a surprisingly yummy combo of fat free cottage cheese and chopped tomatoes and cucumber this morning, then for lunch I had tuna on a bed of salad greens. Part skim cheese was my snack. :)


Oh and it's day 2 for me too :)

I know what you mean about the w/e...giggle. Your menu looks good. Seeing what everyone is eating is great help since it allows us all to know we're on the right track and also gives each other good ideas. I see pork is the dinner of choice for many of us, including me, tonight. LOL

Which brand of SF fudgesicle do you buy? I'm going to get some tonight. :-)

Nuts are one of my downfalls, too. It's nice that we can have 30 pistachios a day!

You're doing fine. I also had the SW eggbeaters for breakfast and I had some turkey deli meat for lunch with my green beans.

Hope you have a nice evening. I have to run out and vote and then get my pork loin cooked for dinner. Don't know what veggie I'll have....maybe zuchini?
