Cheese lover afraid of low-fat cheeses

I am starting the diet soon... maybe Monday, depends on when I can go shopping for the right foods. I know I'll miss my bread and pasta, but the rest won't bother me much. HOWEVER, what I am REALLY afraid of is CHEESE! I LOVE LOVE LOVE cheese, and I'm not so sure I can do low-fat (or no-fat) cheese. I haven't tried much in a few years because it was so awful. I can only hope it is better now. What low-fat cheeses do you really like? what about for cooking with? I know in years past when I tried to cook with low-fat/no-fat cheese it didn't work out at all.
I don't have a problem with part-skim mozzerella, is this low-fat enough to eat? The only other low-fat cheese I have had recently is the Cracker Barrel 2% cheddar, and that is a little dry but I could deal with it.

I second the Alpine Lace Swiss....are all the Alpine Lace cheeses LF, BTW??
I also REALLY like the Laughing Cow Light cheese on celery. YUM. I use FF Kraft cheese slices for general purpose use - they melt pretty well and have a decent taste - the Sharp Cheddar is good, but only if you're look for American cheese, LOL.
Having definite Brie withdrawal, but I'm doing ok - I LOVE cheese, too!!
Try the Cabot's reduced-fat cheddar slices!

The Dannon Smoothies....the pre-made & bottled ones near the yogurt at the store?? I didn't think they'd be allowed....bc of fruit & such....??? (I will be on P2 starting Monday, though)
