Question: Meal substitution in Phase 1?

Hi South Beach Bums! I am new to the beach! Just started today. As I am looking through Phase One, I am realizing what a picky eater I am! My question is, and I have searched the book for the answer without luck, can you substitute proteins in Phase One. For example, I don't like seafood, so instead of a shrimp salad, can I make it a grilled chicken salad? And don't even get me started on mahi-mahi! :) I am not one who needs a large variety in my diet...I need simplicity! I am wondering if the Dr. planned Phase One very specifically in terms of food combinations, or is it just a good carb, good fat, protein thing?
Any info you could provide would be appreciated! Tuna is on deck tomorrow for lunch...ugh!

The South Beach Diet™ is designed so that you can easily swap meals and ingredients. If you don't like eggs for breakfast, have low-fat cottage cheese or lean meat instead. Not a fish lover?
