Scared of new vegetables...

I've been living on beans, green beans and broccoli (and mushrooms in my morning eggs) for the last few days. I have asparagus steaming as I type.

I'm not a big salad eater (lettuce of any type does horrible things to my intestines!), and I'm scared to branch out and try new types of veggies.

Any favorites you would suggest I try? And please add advice on how to cook. I'm a horrible cook, and this is a new situation for me!

How about spinach(buy fresh or frozen and boil)? red, green or yellow peppers(saute in some olive oil)? zucchini and squash(also saute in some olive oil with fresh garlic and basil or whatever spices you like)?

Thank you for those recipes! I believe Squash Casserole is on the menu tonite now!

And the hash brown zucchini might make the basis for a good, different breakfast...

My suggestion is you do a search above ("find messages about") and type in the word veggies. Also, I've posted most of my favorites recently in the recipes section.

I think veggies are the best thing about this diet. Enjoy!

Here's a really easy one:

Cut some tomatoes in half lengthwise. Spread with pesto that you buy already made. Broil for a few minutes.
