Hi, everybody. I hope you're all doing well. DH Brian and I have been really busy lately -- lots of new clients, and some really ADORABLE pets. :) Today we started a series of sits with two 15-week-old siamese/rex mix kittens named Wooster and Jeeves. :)

Things are going well. Both of us are feeling better. The fatigue and weakness has resolved, and we're happy and content. :) It's almost time for Phase II! I've got a bachelorette party to go to tomorrow, but I'm already planning ahead what to eat ahead of time so I'm not snacky, etc. We're going dancing afterwards, but I never drink at the bar so I won't have to worry about that. :)

We're planning our first days on Phase II already, LOL. There are some recipes we really enjoyed last time that we haven't been able to have yet. Monday morning we're having oatmeal pancakes. :) Tuesday lunchtime I'm making whole-wheat pita nachos. :) I'm going to stop thinking any farther ahead than that right now, because it's making me hungry! LOL

Today's eating:
Breakfast: Veggie breakfast quiche, coffee with skim milk.
Snack: 1 light cheese stick, handful chick peas, sliced light deli ham, dill pickle.
Lunch: Bowl crockpot spicy chicken cauliflower soup (recipe posted below), mocha espresso pudding parfait (recipe posted below).

Dinner?
Snack?

(I'm still working on that part of it.) ;)

Happy Friday, everyone. :) I'm off to drink some water and take a nice long bath before our 5:30 Meet & Greet.

Just wanted to let you know that pudding is generally a phase 2 food due to the modified food starches.

Oh, crap. :( I was hoping since it was sugar-free and had lots of dairy, that it was OK. I never thought to look up pudding. :p Thanks for the heads-up.
