Ok Here's My Problem...

I'm just big fat not a big fan of vegetables. I can actually do without the bread and fruit really well. I just have to force veggies down my throat... I cook asparagus into my eggs in the morning, but when it comes to lunch... it's a sad situation. I've lost almost 6 lbs in the first week which was cool, but the honeymoon has to end at some point and I am going to have to really get serious about the veggies soon. I was thinking of covering some broccoli with cheese, but then is that too much cheese. That's another thing... cheese... I physically ate an entire pack of american cheese today...yet I keep losing... somehow I have to stop this maddness!!! I haven't "cheated" or anything, but my portions are all out of wack! I know this is going to catch up with me...
What can I do to these veggies to get them down? and by the way, what does a serving of american cheese consist of? 1 slice? 2?

Sorry to hear you haven't lost any weight. Sometimes the culprit is actually not eating enough. Be sure you are getting all your minimums in - especially the veggies.
Here are some Q&A's that may shed some more light:

Dr. Agatston: Your response to The South Beach Diet™ will generally be in proportion to the amount of weight you have to lose to your relative central obesity and your cravings. Those who lose weight more slowly generally have less abdominal fat, less cravings, and are less overweight. Occasionally, significantly overweight individuals will have difficulty losing weight on The South Beach Diet™ or any other diet. Usually these individuals have a more diffuse distribution of their weight. They do not have cravings, and blood tests show triglycerides less than 100 and HDL greater than 60. In such individuals, it is important to exclude an under-active thyroid, which can be done easily with a blood test. Such individuals have a slow metabolism, and it is particularly important for them to exercise regularly and vigorously in order to lose weight. We often have fairly thin people who complain of slow weight loss and this is only natural. Again, the rapid weight-losers are those with a great deal of central obesity and a lot of cravings.
Member Question: I have been on The Beach since January 11, 2005. I wanted to lose 13 pounds with a starting weight at 133 (height: 5 feet 3 inches). I am 48 years old, work out four to five times a week doing Pilates, Tae Bo, and The Firm with weights. I have not cheated on the diet and have only lost 6 pounds! Is this normal?
Dr. Agatston: Yes. As mentioned above, it sounds like you did not have much weight to lose, and therefore you should expect much slower weight loss than someone who is bigger and heavier. Once swings in blood sugar and cravings are gone and blood chemistry is normalized, then it is difficult to lose more weight through food restriction alone. In fact, food restriction at this point may lead to muscle and bone loss, which results in lowered metabolism and yo-yo dieting. This is what I call the "Cosmo" effect. If you have reached the point where you do not have craving by having normalized blood chemistry and are still looking to lose weight, then you will have to supplement your dieting with exercising, both aerobic and resistance.
I'm probably not getting enough veggies but I am eating more than I ever ate before.
I love carrots, peas and corn-on-the-cob and can't wait until I can eat those again. Then I will eat more veggies. Right now I don't like the veggies that I'm stuck with that much, so I have to force myself to eat them. So, I make up for it with V8.
At least I'm not gaining weight. I guess I will have to increase my aerobic exercise and see if that makes a difference.
As for the part about people with less to lose losing more slowly, I have a lot to lose - 30 pounds. So, I'd like to see some progress - even a pound or two a week. I'm stuck on 150 and would like to get into the 140's.
I hate to break this to you.
You know, I keep meaning to try that "mashed" cauliflower recipe. And that roasted broccoli sounds interesting. It seems that the veggies are a really vital part of this and I don't want to mess up the diet by not eating enough veggies. So I will try that.

Yes, I love the fresh veggies that you get at restaurants.
It sounds like a lot of work - especially if you boil/steam the veggies and THEN toss them in a skillet, but it sounds yummy!
