My beloved and I have decided to start the SBD. HE doesn't like many vegetables and almost no fruit. I've been trying to figure out what he can eat that will cover the veggie "requirement". He likes V8 and will eat any vegetable in a vegetable soup. Is this enough? The only veggies he likes "plain" are on the banned list. Salad is definitely not an option.

Any thoughts, comments or suggestions would be helpful!

This site is great - I've spent the last two days lurking and reading. :)

What about different kinds of beans? Celery with natural peanut butter? Salads (Romaine or spinach) with a good SF dressing?

Have you tried roasting the veggies? Roasted veggies are SO much better than steamed! My favorite is a recipe out of the blue SBD book--one each of zucchini, yellow squash, red onion, red pepper, yellow pepper, & asparagus-cut into big chunks, drizzle with olive oil and sprinkle with kosher salt & fresh ground black pepper. Roast for about 30 minutes in a 400-450 degree oven (check the book, I can't remember the exact temp). I LOVE LOVE LOVE these! Or you could try grilling them as well--seeing as how men seem to love anything grilled, maybe this would win him over.

In the continuing saga of hubby versus veggies: Tonight I made roasted zucchini with olive oil, garlic and Italian spices. He ate a decent serving and said they were 'ok' and didn't rule out eating them again. Woo hoo! Baby steps. . .

I also have a spaghetti squash to try. And I'm definitely sneaking in the fauxtatoes at some point soon.

We are starting SBD in full force over the weekend. Hopefully by then I'll have brainwashed him into realizing he really needs to eat those yummy veggies.

Some salads are boring and some are creative and interesting. Some just look so beutiful, you want to eat them.
Maybe a dynamite home made dressing. I wouldn't give up on the salads.
My first hubby didn't like turnips so i whipped them up and did something to them and he thought it was good, because he didn't know what it was. The next husband didn't like chicken because his mom boiled a whole chicken in a pot of water and he thought it looked gross. I made chicken a different way for a year starting with coq au vin. He ate chicken. Ya never know. Leila
