Hey there! I'm Steph, 34 and back on the beach after being off the wagon for...well, let's just say it's been way too long. I've re-established some very bad habits along the way, and I don't need to weigh myself to know that I need to re-boot: I'm tired all the time, my hair and skin have lost their lustre and my old stand-by clothes are feeling mighty tight around the waist, hips, thighs (and even my arms -- ugh). I have to say that I never felt better than I did when I was beaching it, and I'm longing to get back there...

I start tomorrow, but have a big question... My current job has me on the road for most of the day -- I'm not tied to my desk all day, and while I feel that's a good thing, it leaves me at a loss for lunch. At the 9-5 office job, I had a fridge and microwave at my disposal. Now, I'm literally in the car all day, and need some ideas for some really easy, no-fuss lunches that will hold up in my lunch pack. Any ideas....?

Welcome back!!


When I am on the run at lunch time I usually pack a soft-sided cooler with ice paks. You can put ANYTHING in them.

also, I know when I'm driving while eating, i like things that don't fall apart. I usually do deli meat rolled up with laughing cow light cheese inside of it, and you can wrap lettuce leaves around it. Cherry tomatoes are easy and yummy too. Also a container with v8, or milk. pita pockets are good too, since it's harder for the contents to fall out while driving. HTH!
