I am not sure if I am eating right

Tell me if this ok.
For breakfast I had cottage cheesse (4oz) and a V8. ( I was not hungry)
For lunch I had a crustless cheese and brocolli quiche ( Recipe Kraft's South Beach section) and 1 cup of celery and 1 cup of carrots.
For Dinner I will be having Salmon and Spinach with mushrooms and 2 cups of salad.
Am I over doing it with the veggies and how much jello may I have?

There's no such thing as overdoing veggies on South Beach.
I bought carrots for nothing.
Carrots keep for a long time in the crisper drawer of the fridge.
