Hi

Just need a little advice, I'm trying really hard to get back on track. Question: Lunch time is very hard because I don't plan ahead. I usually have chicken fingers (3 to 4) and I do not have any thing else with it. I am very satisfied with this even though it doesn't sound like alot. I usually grab them on the way to the stables. I show horses, so for me it's an easy finger food on the run. Please give me some feedback. I truly need help. My dinner is much better, We have a meat and usually 2 veggies gbeans, asparagus or baby limas.

My lunch "secret" is leftovers. I almost always try to make a little extra of whatever we are having for dinner so I can have it for lunch. Like an extra chicken breast or pork chop can make several different lunch options and last several days--I can make a WW wrap with veggies & a little meat, or have some of the meat sliced over a big salad. Leftover soup or chili is always great, too. And I love having roasted veggies left over that I can throw in a quick omelet or scrambled eggs (or egg beaters). Another favorite of ours are meals that can be eaten hot or cold--peanut chicken soba salad, soba-edamame salad w/ flank steak, or thai chicken salad are all things that I will make for dinner that are just as good cold the next day. (you can find the recipes for all of them down in the recipe section).

Pitas are good on the run foods.
