I like to do the pickle/cream cheese/ ham rollups.
Last night I made some Ricotta Cheesecakes in tin foil muffin wrappers. My 2 year old even ate one because it looked like a cupcake.
Here is the recipe I found on the Prevention Website. I made them with sugar-free chocolate syrup.
Baked Ricotta Cheesecake - to 1/2-2/3 cup of your favorite ricotta dessert flavor, add 1 egg, beat well, pour into a sprayed custard cup, bake at 325 until done (about 15-20 minutes)
My all-time favorite snack is hummus with red pepper strips. Also, leftover homemade soups make a great, satisfying snack.
I love cold shrimp w chicken wing sauce on celery drizzled with a little blue cheese dressing! or imitation crabmeat w/ smart balance and old bay seasonings nuke till melted.

BYE and Good Luck!
The snack that gets me through Phase 1 is roasted chick peas. I add different flavorings to keep up the variety, and I eat them slowly, because they're high in fiber and fill you up with less than you think you need.
Drain a can of chick peas and rinse them a couple of times to get the 'bean juice' off. Let excess water drain off. Dump onto a sprayed baking pan and sprinkle with salt, garlic powder, onion powder, chili powder, cajun spices, etc. -- whatever flavor sounds good. Bake at 350 for an hour, or until they are brown and rattle on the pan. I take mine out about halfway through and shake them up so that they dry all the way around, not just on one side.
These are a lifesaver for me, because they're crunchy and salty, and perfect for an occasional handful to munch.

I love string cheese, and the lunch meat rollups with alloutte spreadable cheese... The chive flavor is the best.
Nuts are good too, I love walnuts.
