Crockpot Sourcream Chicken
Chix breasts in crockpot
sprinkle with taco seasoning (I make my own)
a cup or so of salsa (depending on how many chix breast you use--I use a lot since I have a big family and like leftovers)
Then cook on low.
After it's done, shred it and add sour cream.
This is so good that I could lick the pot! LOL The kids either eat it with rice or on tortillas. I'll eat it plain. I need crock pot meals on Tuesdays always.

This is fine as long as you don't put sugar in your taco seasoning. I made something like this with a roasted turkey breast this weekend (skin removed), only instead of salsa I added a can of chopped tomatoes W/ lime & colantro along with a small can of diced green chiles. You may want to separate yours out before adding the sour cream and then only use a small portion of reduced fat sour cream on your serving.
