Hi, All!

What a terrific change up to the Phase one bkfst routine!
The kids are used to me fixing waffles for bkfst on Saturdays, I had read about the mock french toast, had a bunch of waffles in the freezer that I had made LAST Saturday, so kiddies got waffles and DH and I had the french toast.

Total YUM. We used SF syrup, of course. Hubby did not feel deprived at all (his big concern). I was only half way done with mine and i looked up at him and he said, "more, please!" It was cute. So I made him another one, but I was satisfied with one. What a treat!

I plan to make kids waffles sometime during the week, when I know I won't be tempted and freeze them. Then make the french toast for me and DH that morning.

Half the sbd things I make dh doesn't even know are good for him. Its only when I tell him, does he *think* it tastes different! Men!

Oh I SO could have used these today when my kids were having homeade waffles and my egg just wasn't impressing me! : )

Here you go:


French Toast SBD Style (Phase 1)


4 whole eggs + 4 egg whites
1 cup low fat or fat-free ricotta
1 T vanilla
1 T cinnamon
Dash nutmeg
4 pkt. Splenda


Beat all ingredients and pour into an 8x8 baking dish sprayed w/ Pam. Bake at 325 degrees F for 30 minutes.

Here's the recipe I use since I'm only making it for one person:

MOCK FRENCH TOAST
2 eggs
1/4 cup part-skim ricotta cheese
1 tbsp vanilla extract
sugar substitute to taste
1/4 tsp cinnamon
1/4 tsp nutmeg (optional)

Mix all ingredients in a blender. Cook in a skillet and serve with sugar-free syrup.

I made the one that Mags' posted, in the skillet, just perfect! I was very tempted to go for it again this morning, so easy! But I'm trying to save it for a treat... but if I face a weak moment in the next week of Phase 1... who knows!!

Okay, I have made mock french toast a lot, and have never been able to flip it without making a big mess. It still tastes good, but looks horrible.

Do anyone of you have any advice?

I'm running about 50/50 on successful flips! I give dh the ones that look good, so he's impressed. ;-)

I don't have a real good non-stick pan, so that might improve the odds a bit.

I have great non-stick pans and it is still a mess -- but man, does it taste good no matter what it looks like! :-)
