im sure there will be salad there ... so i can eat that.  but i need to bring a dish to share.  do u have any ideas on a dish i can bring to share, that i can eat too, but doesnt scream  "ew im on a diet!!!"  lol!!  thanks os much ladies!

I recently brought Buffalo chicken skewers to a pot luck and everyone loved them. I cut up chicken breast, marinaded it in hot sauce/smart balance like you would use for buffalo wings, skewered them and broiled them, then tossed in a little more sauce. I brought both a regular bleu cheese dip and a light ranch dip for them. Big hit.

TACO JUNK (ALL PHASES)
1 lb ground turkey breast/ lean beef
14 1/2 oz diced tomatoes -- canned, no sugar
14 1/2 ounces black beans – canned, drained
14 1⁄2 oz can garbanzo beans drained
Taco seasoning
1 package ranch-style dressing mix
2 cups salsa or picante sauce

Brown meat and drain fat. Put all ingredients in crock-pot and cook on high for 4 hours.


MAGGIE’S CHILI (ALL PHASES) -- from former CL Maggie
1 lb.* ground turkey breast
1-2 lb. leanest ground sirloin (90-94% lean)
1 Vidalia onion, chopped
1 green bell pepper, chopped
3 cans** light red kidney beans, drained & rinsed
2 cans diced tomatoes (no sugar added)
2 cans tomato sauce (no sugar added)
salt and pepper to taste
cayenne pepper and chili powder to taste
ground cumin to taste (just a few shakes)
reduced fat 2% shredded cheddar cheese

In your largest chili pot, combine the ground turkey breast, ground sirloin, onion and bell pepper. Cook and stir occasionally until meat is thoroughly browned. Drain, if needed (so lean there may be no drippings). Add kidney beans, tomato sauce, diced tomatoes and seasonings. Cover and simmer for 45 minutes - 1 hour. Serve in bowls topped with a sprinkling of cheddar cheese.

*Note: Sometimes I use 2 lbs. turkey breast and 1 lb. sirloin. Sometimes, 2 lbs. sirloin and 1 lb. turkey. I almost always use three lbs. of meat, though! VERY thick and meaty chili. Use less meat if you prefer, or use one kind of meat or the other, if you prefer.

** I use regular-sized cans of the canned products listed...about 15.5 - 16 oz. Adjust accordingly if using big cans.

SUPER HEARTY AND HEALTHY CHILI (LESLIE’S VERSION)
1 lb ground turkey
1-2 large onions, chopped
2-3 cans various beans
2 large cans diced tomatoes
1 small can tomato paste
1 small can green chilies
1 tbl salt
1 tbl paprika
1 tbl cumin or more
1 tbl dry cilantro (optional)
1 tbl Worcestershire sauce

Brown ground turkey and onions together in a large skillet. Drain. In crock-pot, add rest of ingredients. Give it a quick stir. Add turkey and onions to crock-pot. Cook on low up to 8 hours, or on high 2-3 hours. If doing on the stove, simmer as low as you can for 30-45 minutes.

WASATCH MOUNTAIN CHILI (FROM “BETTER HOMES AND GARDENS”)
1 medium onion, chopped
1 Tbl. cooking oil
1 15-16 oz. can Great Northern beans, rinsed and drained
1 14 oz. can reduced-sodium chicken broth
1 9 oz. pkg. cooked chicken breast strips
1/4 c. lime juice
2 Tbl. chopped fresh cilantro
1/4 tsp. ground cumin
1/4 tsp. ground black pepper
shredded reduced fat cheese
bottled green salsa
fresh cilantro leaves

In a large saucepan, cook onion in hot oil over medium heat for 3-5 minutes. Stir in beans, chicken broth, chicken, lime juice, cilantro, cumin and pepper. Cover and bring to boil over high heat, stirring occasionally. Serve topped with cheese, salsa and fresh cilantro.

I like to take Taco Meatballs. I make them smaller -- more of an individual size. Instead of wraping the meat around a cube of cheese, I jsut mix in 2 cups of grated cheese, them mold the mixture into meatballs, and bake on a lined baking sheet. DH LOVES them and they go well with other party food -- chips, salsa, etc.

Taco Meatballs
Ingredients:
1 1/2 lb ground lean beef, or ground turkey
1 package taco seasoning mix (Taco Bell, Ortega, etc.)
1 green onion, finley diced
2 eggs
1 clove garlic, minced
1 block reduced fat sharp cheddar cheese, cut into small cubes (You could also try cut up string cheese with this – I think it’s a little easier!) Preheat the oven to 425°F.
Beat eggs and mix all ingredients except the cheese together. Mold a Tablespoon of meat around a cube of cheese to form a small shaped meatball. Repeat with all meat. Place on edged cookie sheet (sprayed with PAM) and bake at 425°F for 7 - 10 minutes or until meat is done and cheese has melted.
Serves 10-15 people.

Maybe try a crustless spinach quiche recipe? I've seen it in a SB cookbook, but have never attempted it myself. Sounds yummy though!
