Hi All,
Been thinking about how to get that mock french toast to flip, so this is what I tried this morning and had three great flips.

I use a stainless, small skillet. I melted a pat of smart balance on low heat, poured in a single serving of french toast batter, kept it on low. This way the batter could coagulate without the bottom overbrowning, when it was no longer runny, I flipped it with a wide, non stick flipper. I made three this morning and was able to flip 'em all!

But like Mags said, they taste great no matter how they look!

I made it this morning too! : )

I Had it in a large pan, so I 'drew' stripes down the french toast and flipped each column individually...so I had 3 stripes flipped.. ; )

I just sprayed pam on the pan and it seems to flip ok in those stripes... : )

AND it was yummy too! First time I've made it!
