Can anyone give examples of what they eat for the snacks during the day? The meals seem easy..meat, veggies/salad etc...what about the snacks? And I noticed the sugar free fudgecicles are on the list as being okay in phase 1...so are those snacks? Where do you consider them?

Here are some phase 1 snack ideas (some will count toward your 4.5 cup veggie minimum, some will count toward your 2 cup dairy requirement):
veggie strips dipped in hummus or salad dressing
nuts (limited quantities)
cheese sticks
other lowfat cheeses
cottage cheese
plain, not-fat yogurt sweetened with splenda and extracts or sf syrups
smoothies (no fruit for phase 1, but can flavor them as with yogurt)
pickles, olives, roasted peppers (other sugarless condiments)
leftovers
soup
chili
lean deli meats rolled around veggie strips or cheese

We are also allowed to have a sweet treat each day providing that it's limited to 100 calories or less. Here are some phase 1 sweet treats:
SF Fudge bar
SF popsicle
SF jello

I almost forgot the most important sweet treat of all.....the South Beach Peanut Butter Cup:


Slightly melt a sf fudgebar in the microwave, just long enough so you can remove it from the stick. Then, mix it with 1 tablespoon of natural peanut butter and a squirt of fat-free Reddi Whip. Stir, and eat...delicious!!

I would encourage you to browse through the food journal folders to get a idea of the *many* snack ideas that people here eat throughout the day. The possibilities are endless. . .

SF fudgecicles count towards your sweet treat allowance. Remember to count all sugar-free treats toward the 75- to 100-calorie daily limit on sweet treats. ENJOY!

One of my favorite snacks is from my preschool days. Remember ants on a log? A celery stick smeared with peanut butter. I skip the ants (raisins), and I'm set. Or I'll smear Laughing Cow Light cheese in there. I'm pretty content with this and string cheese and nuts, but at night I HAVE to have my fudgesicle. I only eat half a serving, but I've got to have it! It tastes sinfully good. I still haven't tried the SBD peanut butter cup though...
