Okay what is Ricotta Cream? Is that a pudding? A cheese? Do you buy something called Ricotta creme or is this something that you make?

Ricotta creme is a treat that's allowed in any phase of SBD. There are many variations and the flavor possibilities are endless.

For the basic recipe, stir together:

1/2 cup part-skim ricotta
splenda to taste (I use 2 packets)
1 teaspoon vanilla extract

Variations that you can stir in (any combination):

any flavor extract
sugar-free syrups
peanut butter
sf jam or jelly
nuts
spices like cinnamon, nutmeg

You should try it, especially if you have a sweet truth --- it can be a real lifesaver in phase 1!
