I wasn't sure whether to put this here on in recipes. I saw a recipe for homemade fudgesicles. I noticed though it calls for a packet of the pudding that we can't have on phase 1. I did find a recipe for homemade pudding though. I haven't tried it yet but it calls for cornstarch.

My question is what can we substitue for the cornstarch so it's not as starchy?

Small amounts of cornstarch used as a thickener are fine in all phases.

Yes, the homemade fudgesicles are a phase 2 recipe. I posted it because the OP lives overseas and cannot get sf fudgebars (which are legal for phase 1).


I don't recall seeing a phase 1 recipe for pudding, but here is a recipe that got rave reviews (it's legal for phase 1):


Mocha Custards

Prep Time: 20 mins Cook Time: 30 mins Rest Time: 3 h Total Time: 50 mins

Ingredients


  • 2 1/4 cup(s) milk, fat-free
  • 1/3 cup(s) sugar (substitute Splenda)
  • 3 tablespoon cocoa powder, unsweetened
  • 1 tablespoon coffee, instant
  • 3/4 cup(s) refrigerated or frozen egg product, thawed
  • 1 1/2 teaspoon vanilla
  • frozen light whipped dessert topping, thawed
  • coffee beans


Preparation

1. Preheat oven to 325°F. In a medium saucepan combine the milk, sugar, cocoa powder, and coffee crystals. Cook and stir just until cocoa and coffee are dissolved.

2. In a medium mixing bowl gradually whisk hot mixture into egg product. Add vanilla. Place six 6-ounce custard cups in a 3-quart rectangular baking dish. Place on the oven rack. Pour egg mixture into the custard cups. Carefully pour boiling water around the custard cups into the baking dish to a depth of about 1 inch.

3. Bake in preheated oven for 30 to 35 minutes or until a knife inserted near the center comes out clean. Remove the custard cups from baking dish. Cool to room temperature. Chill in the refrigerator 2 to 24 hours. If desired, garnish with dessert topping and coffee beans.

That does sound yummy and I am that same poster. :) I did go to the commisary today and ask if they could order them for me. They said sure! I don't know how long it will take them to get here though. Thanks.
